A profound knower of Pantanal cuisine, Paulo Machado holds a degree in law and cuisine and spent a season in the French cuisine program of the Institut Paul Bocuse in Lyon, France. The chef is the owner of the Paulo Machado Food Research Institute in Campo Grande, where he teaches courses and conducts national and international consulting and events in Brazilian cuisine since 2010. Paulo is a member of the Slow Food project, Of the Gastromotiva social initiative, in São Paulo, which trains low-income students for the restaurant market.
